Recipes of the day!

So I have been making lots of new recipes for dinner lately and do far we have liked them all do I thought I'd start sharing them with anyone who wants to try them
Chicken enchilada casserole
3 cups cooked chicken, shredded
1 pkg taco seasoning
2 cups verde salsa
8 oz sour cream
9 fajita size flour tortillas
1 can refried beans, warmed in microwave
3 cups shredded cheese( I used fiesta blend)
-Heat oven to 350*, mix chicken, salsa, taco seasoning, 1/2 cup water in skillet. Simmer med heat for 10 min.
-coat 13x9 baking dish with nonstick spray. Cover bottom of pan with 3 tortillas overlapping. Pour 1/2 chicken mix on tortillas. Cover with 3 more tortillas. Mix beans with sour cream and spread over tortillas. Sprinkle with 1/2 cheese cover with 3 more tortillas. Top with remaining chicken sprinkle remaining cheese on top.
- bake for 25-28 min until bubbly

Lots going on!

So I have been a horrible blogger lately.
Brandon, Nash and I are finally in a house. We moved into our home the beginning of September. We are enjoying our home and loving the space!
We have had a few bumps since we moved in.
We had a flood in the kitchen. Brandon and I were attempting to replace our kitchen faucet because it broke. Long story short a pipe broke in the wall under the sink and we had about 2 inches of water in our kitchen, dining room and into our living room. We are so grateful for insurance. We are now preparing for a remodel. I will post pictures after the remodel is complete.
Then our heater wasn't working a couple weeks ago and of course it was the coldest weekend of the year. We were cold for a few days but thankfully it all got taken care of so we are nice and warm now!!!
We have been welcomed into homeownership very nicely!
